Because I’m not used to heat of the summer of Tokyo, I don’t have an appetite. However, this sandwich brings an appetite to me.

400 g potatoes
4 hard boiled eggs
1 red onion
1 jar dill
1 tablespoon Dijon mustard
2 tablespoons olive oil
2 teaspoons white wine vinegar
400g smoked salmon
1 pinch salt
1 pinch freshly ground black pepper
ciabatta or baguette
1.Peel and finely dice the potatoes. Boil the soft, about 10 minutes. Boil eggs, seven minutes and peel them.
2.Peel onion, chop it and dill.
3.Mix mustard, oil and vinegar.
4.Chop the salmon and the hard-boiled eggs.
5.Mix the salmon with potatoes, eggs, onions, dill and vinaigrette.
6.Add salmon hash on ciabatta or baguette.
